Spices And Their Place In Traditional Remedies

* Drogsan A.Ş., ANKARA** Ankara Üniversitesi Eczacılık Fakültesi Eczacılık İşletmecilik AD, ANKARA According to the definition of the Institute of Turkish Standards-TS 7417 September 1989-spices are vegetal products or their mixtures used to give flavour and aroma to foods.Throughout the history, spices have been arroused the human being's interest with their various properties and taken place in the kitchens of almost of the countries and used for medical purposes. It is recorded in literature that some spices like thyme, cumin and coriander used in the oldest civilizations.In addition, it is known that some spices have appetitive, digestive and preservative effects.Spices are generally classified into three grups according to their flavours and aromas.1. Sour spices2. Bitter spices3.
